Gently extracted juice was fermented with a wild yeast in a combination of new and older oak, this has delivered added texture and pallet weight.The flavours are of a pome fruit salad, white and yellow peach with hints of nectarine and apricot and a slight tropical edge and a hint of butterscotch.
